Cream-filled wafer sandwiches are cooled so that the cream filling sets sufficiently for cutting and packing. Cooling the sandwiches ensures a clean cut.

The capacity of the wafer sandwich coolers depends on the plant performance and the product-specific cooling time. 
Coolers of the KT type generally operate with circulating air, i.e. the cooling air heated by the wafer sandwiches is continuously sucked off from the cooling zone, cleaned and cooled in the evaporator. The cooling time is set between 5 and 20 minutes depending on the product.
